  • 🍠🧡🍠Roasted yams for the win 👏🏻👏🏻👏🏻 These crunchy sweet morsels are my favourite addition to a simple meal.⠀

    1️⃣Simply, wash, peel and slice/cube/wedge your yams. ⠀

    2️⃣Toss with a generous amount of avocado oil or grapeseed oil. ⠀

    3️⃣Season with salt, pepper, garlic powder and paprika (I love smoked paprika).

    4️⃣ Bake at 375F for approximately 40 minutes OR until slightly browned, making sure to flip the yams half way through baking.⠀

    Serve with as a side (e.g. roasted chicken & broccoli), in salads, stir-fries, casseroles or in a breakfast hash with a side of chipotle garlic lime mayo 🍠🍳🥦🍗🥗 ⠀

  • A friend sent me a recipe for, “Detox Chicken and Vegetable Soup” and oh child. I, of course, can’t leave a recipe alone with doctoring it but it so doesn’t need it. The soup has chicken, tomatoes, garlic, onion, zucchini, yellow bell pepper, cauliflower, celery, carrots and spinach. I added a can of garbanzo beans and a can of white beans to it. It increased the fiber, protein and made it more filling. I’ve included the nutrition as I made it, in the post. 221 calories per huge bowl! Also, I made this in a crockpot!! It took TEN MINUTES! Dump and forget! Sooo flipping good. It taste like minestrone without the pasta.
