  • Super easy & delicious Shrimp Fried Rice
    INGREDIENTS:
    🦐1 Medium Yellow Onion Chopped
    🦐2 Garlic Cloves Minced
    🦐1 inch piece of Peeled Ginger Minced
    🦐3 Tbsp Butter
    🦐1 lb cooked shrimp (no tail). I use 2 cups of Pacific Cold water Shrimp Meat from @wholefoods
    🦐2 cups Frozen Mixed Veggies (corn, carrots, peas)
    🦐2 cups Cooked Brown Rice (cooled). I like to cook rice before hand in mushroom stock. Use chicken or vegetable broth. This adds way more flavor to your rice and final dish
    🦐2 Beaten Eggs w/ Salt,Pepper & Powdered Garlic and Onion
    🦐2-4 Tbsp Soy Sauce
    🦐2 Scallions (green leaf chopped)
    INSTRUCTIONS:
    🦐 Heat Butter and add onions, frozen veggies and ginger. Cook until onions are fragrant and softened (5 mins)
    🦐Add Garlic and cook for a minute
    🦐Add Shrimp and salt & pepper. Cook for 3-4 minutes. The shrimp will release moisture so cook until most moisture is gone but don’t lose the “crunch” in the veggies
    🦐Move mixture to side of skillet and add rice. Cook for 2 minutes to get rice heated through and mix everything
    🦐Move above mixture to side of skillet and add egg. Scramble the eggs
    🦐Mix everything together, add soy sauce and mix everything through
